Ajvar – vegetarian caviar

Ajvar

 

20kg. red peppersAjvar man

12 pieces of eggplant

4kg. red tomato

2l. oil

 

Preparation:

Wash the red peppers or wipe them with a damp cloth. Then, bake them, peel them and let them drain.

Bake the eggplants, peel them and leave them cool.

Bake the red tomatoes and peel them.

Mince them all together with a meat mincing machine, put the resulting mixture in a container to fry them. Put half a liter of oil at the beginning and some more oil during the frying, so that 2 liters of oil are used.

The ajvar is fried for about 40 – 60 minutes. After it is well fried, put it in already prepared and warmed jars.  Wait for the mixture to cool, and the close the jars with a lid. Then spread it on bread, take some cheese with it and eat it! Bon appétit!

AJVAR IN A POT

12 kg. red peppers

12 eggplants

3 kg. carrots

1 liter oil

 

Preparation:

Bake the peppers, peel them and leave them to drain.

Bake the eggplants and peel them.

Cook the carrots and mash them.

Mince the peeled peppers and eggplants with a meat – mincing machine and put the mashed carrots in it. Once well mixed, put it into another pot where it can be fried together with oil.  When fried, fill the already prepared jars with the mixture, put them into a warmed oven (turned off though) and leave them there until the oven gets cold. After  they are cold, we close them with a lid. It is tasty, enjoy!

3 liters hot oil

 

Preparation:

Bake the peppers, peel them and leave them to drain.

Bake the eggplants and peel them.

Bake the red tomatoes and peel them.

Mince them all together on a meat – mincing machine and put the resulting mixture in a pot with 3 liters of hot oil. Fry it for about 60 minutes. Put it in jars, leave it to cool and then close the jars with lid.
