Macrobiotic/Vegan  Coconut  Cake

Macrobiotic Coconut Cake 

Ingredients  for  dough

3 cups whole wheat flour

100 ml . unrefined oil

3 grated apples

100 gr . coconut

1 teaspoon sodium bicarbonate (baking soda)

1/2 cup of barley malt extract (not necessarily )

200 ml . mineral carbonated water

Preparing the dough

* Rub the integral flour and unrefined oil with  hands . Add grated apples , a teaspoon of sodium bicarbonate , and 200 ml. mineral carbonated water .

* Cover the mixture with a lid and leave it for 20-30 minutes.

* Bet a pan (no. 30) with a baking paper and after 20-30 minutes pour the dough in a pan and  put it to bake for 30 minutes at a temperature of 200 degrees .

Ingredients for the filling

400 gr . rice flour

1200 ml . apple juice or rice milk

1 cup of  barley malt extract (optional)

100 gr . coconut

2 tablespoons unrefined oil

Preparing the filling

* Pour 1200 ml . ( 6 cups ) of apple juice in the pot  and add 400 gr . rice flour, a cup of barley malt extract(optional) . Put it on fire and stir with a stirring wire until you don’t make it thick like a pudding.

* When it thickens add 100 gr . coconut and 2 tablespoons unrefined oil. Leave the filling to cool.

Macrobiotic Coconut Cake

*  Cut  the baked dough in half and fill it with the fill from the inside and the outside.

Finally pour the melted dark chocolate for cooking  on the cake.
