Ingredients for 4 people

400 gr . peas

3 carrots

6 tablespoons boiled brown rice

1 celery root

1 head purple onion

6 tablespoons celery root cream  

1 pinch Himalayan salt

½ lemon ( juice of half a lemon )

Preparation

* Boil the peas and pour the water . Allow water to drain in a strainer .

* Clean the celery root and carrot and place the steam to soften for 3 minutes . Then cut the celery into cubes and carrot  into  crescents .

* Clean the onions and cut them into  crescents .

* Place the peas in a bowl , add the celery cubes , add the carrots and onion crescents , add a pinch of salt , the juice of half a lemon , six tablespoons of boiled rice and six tablespoons of celery  cream. Mix all ingredients and serve the salad .

Peas are an excellent source of vitamin K, which a part of it is converted into K2 by the human body  . Vitamin K2 activates the osteocalcin (an essential protein  to bone), which helps calcium incorporation into bones.  Because the peas lower the  homocysteine, nutritionists  recommended to consume at least once a week during pea season as prevention of osteoporosis,especially women who are postmenopausal.
